We were invited to watch the big Hatton v. Pacquia fight (that's boxing by the way) at a bachelor's house meant one thing - I have to bring cupcakes! Red Velvet seemed appropriately aggressive yet still very domestic.
I loved the cream cheese frosting - and the recipe made enough for a thick piping on each cupcake! I didn't love the cake - and will be searching for a tastier recipe. This cake was light and airy - but lacked FLAVOR. So - I melted some white chocolate, tinted it red, and piped it into little star shapes. This helped add a little burst of flavor.
If you have a great Red Velvet Cupcake recipe - please share. No matter how dramatic - it needs to taste great!
Cupcake recipe: Paula Deen's from foodtv.com (just telling you so you know to stay away.)
Frosting (for 24 cupcakes)
1 lb cream cheese at room temperature
2 sticks butter at room temp
4 cups pwd sugar (a little more than half of a bag)
1 tsp vanilla
* mix cream cheese and butter together until smooth. Slowly add the powder sugar and mix until smooth.
* Pipe on cupcakes that are completely cool
For chocolate stars:
melt 2 4 oz bars of high quality white chocolate
stir in enough food color to get desired color
let cool slightly - spoon into piping bag with large star tip. Pipe stars on parchment covered sheet and place in the fridge to harden.

I love red velvet cake...especially in the form of an armadillo cake. (Yes, a slightly odd fascination for a Canadian).
that is SO red!
I just made red velvet cake / cupcakes last week. Brings back memories of childhood. My fingertips took about a day to not be red anymore!
Thanks for sharing!

They look fantastic. Awesome colour! Beautiful presentation. Though i have never made a red velvet cake, check out martha stewart's website. I have still never been let down by anything on her website :D
Mmm this post has 2 things I love - red velvet cupcakes and Manny Paquiao. :)
Red velvet cake is a real treat! You did a fantastic job, this looks perfect.
I have never had any luck with Red Velvet ANYTHING! I once made a Red Velvet Bundt cake and took it to a party. Somehow the red food coloring made its way to the middle of the cake. Someone commented on the beef tenderloin cake. EMBARASSING! So I am just hoping you will send one of your cupcakes my way (kidding) Your cupcakes look amazing.
NICE big dollop of cream cheese frosting ... just the way I like it! Oh, wanted to send some WARM wishes your way too :)
Ive only recently gotten into red velvet cake, but I love it!! these looks to do for.
I had to wait until the next morning to learn who won - yay, Manny! These cupcakes look great although I'm sorry to hear the flavor wasn't quite as good as expected. It's been ages since I made a red velvet cake so I can't even recall how it tasted. Maybe I should make one again before making a suggestion . . .
